Paleo Pumpkin Bread Recipe

SERVES: 2-3
PREP TIME: 5-10 minutes
COOK TIME: 30-35 minutes

Ingredients:

  • 1 cup pepitas, toasted
  • 6 dried dates, pitted
  • 1/3 cup pumpkin puree
  • 2 Tbsp coconut flour
  • 3 whole eggs
  • 1 tsp vanilla extract
  • 2 Tbsp raw honey
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp ground cloves
  • pinch of salt

Instructions:

1.  Preheat oven to 375 degrees.

2.  Add toasted pepitas to your food processor and process until they become flour-like in consistency.

Pepitas not toasted? Toss them in a pan with a little coconut oil and toast 3 minutes each side, until fragrant. 

3.  To that, add your dates and puree until smooth.

4.  Add all remaining ingredients to the food processor and puree again until smooth.

5.  Use a touch of coconut oil to grease a 9×5 bread pan, pour mixture into pan and bake for 30-35 minutes.
